Rooibos and Honey Cocktail

In honor of our recent public holiday and in preparation of next week’s long weekend, we’ve chosen something deliciously native to South Africa for you and your mates to enjoy this weekend. Refreshing and easy to make.


Prep time: 5 mins / Cook time: 15 mins plus 1 hour cooling / Serves: 2


  • 1 rooibos tea bag
  • 150ml boiling water
  • 4 tablespoons fynbos honey
  • 1 lemon, juiced
  • 500ml soda water
  • 2 tots Esperanza
  • Dehydrated lemon, to garnish

Steep the rooibos tea bag in the boiling water for 5 minutes. Discard the tea bag and pour the black tea into a small saucepan. Add the honey and simmer over low heat until the mixture forms a light syrup. Allow to cool. Fill a cocktail shaker with ice and add in the rooibos syrup, lemon juice and Esperanza. Shake to combine and divide the mixture between two highball glasses. Add ice and top up with soda water. Garnish with the dehydrated lemon.

Serve immediately and ENJOY!!!
